How's prepping been?
This week I made something fairly simple and with few ingredients, but incredibly tasty and healthy.
Kale is one of those foods that the world is trending on these days. Between smoothies, chips, guac-KALE-mole (I just made some tonight,) and a million other different creations, you can have it just about anyway you can think. Broccoli is too, though not as appetizing in a guac, there are a number of different ways you could have it. I'm also convinced avocado is natures butter. Did you ever think that all of these could be amazing with just a little lime juice? It's fantastic. I stumbled upon a recipe from the app Prepd after purchasing their lunchbox. It's filled with plenty of recipes including this one. It's so simple, and here's how to do it:
Ingredients:
- 1 Cup White Quinoa
- 1 Avocado
- 1 Cup Chopped Kale
- 1 Cup Broccoli Florets
- 1 Lime
- 1 Handful of Basil (chopped)
- 1 Handful of Mint (chopped)
Steps:
- In a skillet or pan, bring 1 cup quinoa and 2 cups of water to boil and then let it simmer for 15 minutes or till the water has absorbed.
- When the water has absorbed, add the mint and basil to the quinoa, mix and set aside for about 10 minutes to steam and absorb those wonderful flavors.
- In a large heatproof bowl, have chopped broccoli florets and kale washed and drained. Bring a kettle to boil and add water to the bowl, drain after 1 minute and then rinse with cold water. We want our veggies soft but not over cooked.
- Remove the skin and stone of your avocado, then chop it into cubes.
- Add the avocado to the cooled down veggies, squeeze the juice of a lime, and mix!
- Plate up your portions in 4 containers, and you're done!
Its that simple, and shouldn't take more than 30 minutes to have 4 days worth of lunches! No Tips this time, it's pretty straightforward and delicious as is!
