For an old friend...

How did the week treat all of you?

This week marked the two year anniversary of an incident that happened in the lower east side of Manhattan. There was this restaurant called Sushi Park (it was fantastic,) that had an explosion due to an improper gas set up. The incident injured and claimed a few, and I was there two days prior bragging about how amazing the place was, that I've always gone there, that I was always going to go there. It scared the hell out of me, I wont lie, and I miss that restaurant terribly. This place was an old friend, I knew some of the wait staff, they took care of me as a regular customer. We'd sit down and discuss life and family. In such a busy city, it was a place where you could feel very welcomed. I decided, in its honor, I'd make some spicy "beef" ramen -the dish I would never not order from that place; I'm salivating just thinking about that broth. Mine came close, but nothing beats the original... None the less, here's how I did it:
Ingredients:

  • 4-6 oz Dried Rice Noodle
  • 4 Spring Onions
  • 2 cups Spinach (I used baby spinach)
  • 2 cups Snap Peas
  • 4 oz Tofu
  • 2 oz Red Miso Paste (I hear whole foods has it but I have an Asian grocery store)
  • 2 oz Wasabi Paste (If you can find it in a tube, even better!)
  • 4-6 red chilis
  • 2" Ginger Piece grated.
  • Handful of Cilantro
Recipe:
  1. Cook your noodles according to the package.
  2. Slice your snap peas in half, finely chop spring onions and chilis, cut tofu into classic bite sized cubes.
  3. Set noodles into the container, add all previously chopped ingredients and top with a dollop of miso and wasabi, sprinkle grated ginger, and top with fresh cilantro (chopped or crushed, if you wish.)
  4. When you are ready to eat it, add boiling hot water, stir well, and cover for a minute.
Oh Man! How easy is that? And it kicks those cup-o-noodle things butts any day of the week.
